Leuta Occhio di Pernice Vin Santo 2007
Harvest method: Harvest is carried out in September, and then the grapes enter a process of natural drying that lasts 6 months. In mid to late April the grapes are pressed and the concentrated juice remains in a steel tank for two months before being aged for 12 years in small oak barrels – caratelli – together with the mother yeast.
Aging Potential: 30 years
Tasting notes: deep dark color with a red halo around the rim, it is very viscose, thick, and creamy. The bouquet is complex and intense. It is a concentrated sweet wine expressing notes of dates, coffee, dried plums, sweet spices that soon evolve into a more intense sensation of marzipan, dried figs,Italian pastry, chocolate and a delicate touch of candied citron. On the palate it is extremely full, dense and sweet but never sticky, there are hints of caramel but mostly dried fruits, a very harmonic and balanced wine with a spectacularly long finish.
